No establishment can pay to be listed. No sponsorship or commercial arrangement influences what appears in this guide. If something is here, it is because we believe it belongs. Commercial links, when present, are disclosed and follow editorial judgment; they do not create it.
No ratings
We do not assign scores, stars, or rankings. Reduction to number misrepresents experience. A place is either worth your attention or it is not included.
Selection based on repeated visits
Nothing enters this guide after a single visit. We return across seasons, across years. Consistency over time is the only reliable measure of whether a place has earned its character or merely performs it.
Removal without explanation
Places may be removed from the guide at any time. We do not publish reasons for removal, nor do we notify establishments. This is not a directory. Inclusion is a privilege, not an entitlement.
Slow updates by design
This guide updates slowly. We do not chase trends, respond to openings, or rush to document what has not yet proven itself. Patience is not a limitation—it is the method.
These principles are not subject to discussion. They are the foundation upon which this work is built, and they will remain in place for as long as this guide exists.
